The wine ages in vats, and during the next spring, we make a second fermentation in bottles according to the champagne method. The ageing proceeds on slats for at least 18 to 24 months.
These vines, more than 30 years old, planted on granite and schist soil, produce a fresh, elegant and subtle sparkling wine with a pale yellow robe.
The bubbles, very fine once in the mouth, form a beautiful steady ring. Its white flowers and violet aromas with a hint of menthol and vanilla give it a pleasant persistence in the mouth.
Ideal as a pre-dinner drink.
To be served chilled at 6 or 7°C.
